Sun Dried Tomato And Sausage Pitta Pizza

Since my return from Rome last week I’ve been dreaming of the food non stop. From all the pesto samples we tried and tested fresh off the market stools, to the pizza’s that only the Italian’s can do best. Whilst this recipe isn’t a classic thin stove cooked Italian pizza, it still boasts all the classical flavours that an Italian pizza does.

For the base I’ve used one of my favourite pesto pots from Sacla – sun dried tomato – where their ingredients come straight from Italy. Now, unless you’ve been to Italy it’s hard to understand just how stunning the food is. Forget about your Domino’s pizza and your Zizi’s carbonara, because quite frankly, us Brit’s have been getting Italian food wrong for the past century. Oh so wrong. 

As this is a breakfast pizza (as in a pizza you can have for breakfast – not just a breakfast themed pizza) I wanted this recipe to be simple, quick, nutritious and protein packed. I don’t know about you, but I always find that when my breakfast’s contain a healthy amount of carbs and protein, I’m always left feeling fulling for fuller. So thanks to the fibre packed pitta bread (I’ve actually used Tesco’s sourdough and ancient grains pitta bread) and the chicken sausages, this sun dried tomato and sausage breakfast pitta pizza will keep you feeling full and energised until lunch time.

All you need for this recipe are 5 ingredients – that you’ll no doubt already have in your fridge if you’re a super foodie like me – and you’re good to go. When it comes to the pizza itself, you can pretty much use whatever style of bread you like. Naan, pitta, an actual flatbread or a mini pizza base. Choose your favourite and go wild. When it comes to the sausage, you can use whatever sausage you like but for this recipe I went ahead and used some delicious chicken sausages from Aldi. Plus, they’re half the price of Heck’s sausage’s!

If you ask me, this recipe couldn’t get any better. The sourdough works amazingly well with the pesto, the chicken compliments the flavours and the best bit? Ripping a bit of pizza off and dunking it in the gooey egg yolk. Oh mumma mia.

Sun Dried Tomato And Sausage Pitta Pizza

Ingredients

  • - 1 sourdough and ancient grain pitta
  • - 2 chicken sausages
  • - 4 mixed cherry tomatoes
  • - Half 1 large vine tomato
  • - 1 tbsp sun dried tomato pesto
  • - Half cup spinach
  • - 1 large organic egg
  • - Sprinkle pepper

Instructions

Begin by grilling your sausages for 12 minutes (or until cooked) and pre-heating your oven to gas mark 8.

Whilst your sausages are cooking, prep your pitta pizza by spreading the sun dried tomato evenly over the pitta. Top with spinach and  sliced tomatoes.

Once your sausages are cooked, slice them up and place them in a circle around the pitta bread (to stop the egg white leaking out over the sides). Place your pitta pizza onto a baking tray and crack the egg into the middle of the pitta. Sprinkle with pepper and pop in the oven on the top shelf to cook for 8-10 minutes or until you reach your desired egg cooking time.

Once done, remove from the oven and tuck in!
