Raw Peanut Butter & Banana Brownies

peanut butter and banana browniesAs I sit here sipping my green tea (anybody else obsessed?) I’m reminiscing about these gooey and nutty brownies I made the other day. I actually made them for a local cafe and received amazing feedback so hopefully you’ll love them just as much.

The base of the brownie not only has the traditional gooeyness of a classic brownie but it has a lovely added nutty texture to it from the peanuts. The combination is just right with the creamy peanut butter and banana topping. I love having banana and peanut butter together as a snack so I figured what an amazing combination for these raw brownies! Put the base and the topping together and you have an amazing sensation of flavour that will surely leave your taste buds asking for more.

These little delights are free from refined sugar and dairy and are packed with natural ingredients. No hidden nasties!

Let’s get making.
Serves roughly 8

Ingredients:

Brownie
1 cup pitted dates (soaked for 10 minutes in boiling water to soften)
120g ground almonds
5 tbsp cacao powder
100g smashed peanuts

Peanut butter & banana layer
5 tbsp pure peanut butter
1 and a half ripe banana
cacao nibs for topping

Method:

Place baking paper over a brownie tin (you want to be able to lift the brownie out of the tin with the paper).

Very simple and extremely quick. In a bowl add all the ingredients for the brownie except the peanuts and blend until the mixture has formed together in a paste that you can pinch and it will stay together (not crumbly). Then add the smashed peanuts and blend just until they have mixed in with the rest of the ingredients. Pop the ingredients into a brownie tin and leave to the side.

Again, in a bowl blend all the ingredients for the top layer together until creamy. Then evenly paste this mixture over the brownie layer. Decorate with cacao nibs and place in the fridge to set for 10 minutes. Then you can take out your brownie, cut and serve.
