Chocolate and cherries – what’s not to love huh?

If you’ve been following me on Instagram recently (@hannahandfitness) then you’ll have seen that i’ve taken up a 21 day challenge with Seasonal Berries to incorporate cherries into my daily diet. I think cherries are often knocked on the head as not having many nutritional benefits but that couldn’t be any further from the truth!

So when the Superfood Bakery sent me their spirit lifter cookie mix I was in pure cookie heaven. After previously reviewing their energy booster pancake mix (lord that stuff was crazy) I knew this stuff was going to be just as good. Real good.

The cookie mix itself serves a maximum of 18 cookies (although, quite small – so I halved mine for bigger ones) and only requires 3 added ingredients – 1 egg, oil and maple syrup. However, I switched my added ingredients up a little with what I had in the kitchen and of course added some chopped up cherries.

The making took no longer than a few minutes and within 10 minutes they were in the oven and almost baked! Easy peasy, lemon squeezy.

Once baked the cookies smelt, looked and tasted amazing. They were firm, yet tender. Chocolatey, yet pleasing and the combination of the chocolate and cherry was perfect. Match made in heaven i’d say. Without doubt, the cookie mix lived up to my expectations.

My only regret? That I shared them with everybody else in the house!

Ingredients

1 pack spirit lifters cookies (from Superfood Bakery)
1 egg
30g coconut oil melted
20g fruit syrup
1 cup cherries cut up

Method

In a bowl whisk together the egg, coconut oil and fruit syrup.

Add in the cookie mix and stir the mixture in with the wet ingredients until everything comes together.

On a greased baking tray, add heaped tbsp’s (if you want big cookies) of the mixture and repeat until you have used up the lot. Finish the cookies off by adding in the cherries – simply press some pieces down onto the cookies until an even amount has been used for each.

Place in the middle of the oven and bake for 15 minutes (or a minute or two less if you prefer gooey cookies).

Remove from the oven, leave to cool a little and then dig in!

These cookies will keep in an airtight container for a few days in the fridge. Perfect to snack on during the week!
