Blueberry Oat Bars

I love breakfast. I swear some nights I go to bed earlier just so morning comes round quicker! My favourite is definitely a big bowl of warmed oats paired with fruits and cinnamon. But, sometimes life gets in the way and we don’t always have that extra time to make a yummy breakfast.

So, let me introduce these amazingly soft and moist oat bars that burst with blueberry juices… How good does that sound?! They’re free from refined sugar and dairy – totally healthy! If you love baked oats then you will absolutely love these (just think – mini baked oat bars). Besides breakfast I also enjoy these as a yummy power snack to keep me full between meals.

Makes 6 large oat bars

Ingredients

150g oats
115g blueberries + 50g mixed in at the end + a few for topping
110ml almond/coconut milk
2 tsp vanilla extract
75ml maple syrup
2 tbsp raw honey (if desired for extra sweetner)

Method 

Set oven to gas mask 4

In a food processor stir ingredients all together (apart from the 50g blueberries) until mixture has formed together. Stir in the last of the blueberries. Pour mixture into a lined baking tray and add a few blueberries for topping. Place in the oven for 20-25 minutes. Once baked, remove the tray from oven and leave to cool. OR, if you’re impatient like me enjoy a warm slice and wait for blueberry juice heaven. Mmmmmmm.

As much as I loved these as an oat bar recipe I would like to turn these into crunchy granola bars so watch this space!
