Easy Jack Daniels BBQ Chicken and Pineapple Parcel

Sweet, tangy and chargrilled to perfection, this is definitely a recipe to finish summer off with a bang – BBQ, or no BBQ.

For as long as I can remember, BBQ’s have always been a favourite dinner time option in our household. But not your regular hotdogs, burger kind of BBQ’s. Oh no no. My mum would always go that extra length with spicy ribs, different flavoured sausages, chargrilled fish, fancy kebabs, chicken parcels, Mexican cous cous and pasta dishes and salads that would overflow with colour. My favourite dish would always be the foil parcels. – filled to the brim and bursting with all different summer BBQ flavours.

This weekend I decided to get a little creative with one of the sauces from my new Jack Daniels BBQ range and re-create a smokin’ BBQ meal – all without the help of my BBQ. Now don’t get me wrong, BBQ’s are great and all, but 1) it’s quite a faff to clean up afterwards (am I right?) 2) thanks to the typical British weather, it wasn’t quite BBQ weather and 3) sometimes a lazy night is called for whilst nursing a hungover G&T head.

Overall, I think a pat or two on the back was deserved after this simple, but ever so flavoursome dish. I didn’t expect quite so much flavour from just 6 main ingredients but trust me, this recipe could be the party topper at your next summer BBQ or indoor dinner party.

I went for Jack Daniels Full Flavour Smokey BBQ sauce (although the traditional one was a close contender) and it worked perfectly well against the sweet chargrilled pineapple and crunchy summer vegetables. Chicken and pineapple have always been a favourite combination of mine, but feel free to experiment with a different meat or fish. Out of the entire Jack Daniel’s BBQ sauce collection, the full flavour smokey sauce has to be my favourite. Perfectly rich with BBQ but sweet enough to come back for more. Yum. There’s also a smokey sweet sauce which could work really well if you decided to skip the pineapple. I tested this sauce with both the chicken and pineapple but altogether, it was just a little too sweet with the pineapple.

All in all, this recipe really is as easy as pie. Simply throw all your ingredients together in foil parcel, seal well (really well) and place under a grill or on top of an outdoor BBQ. Cook for 25 minutes and tah-dah, you’ll have the juiciest, sweetest and smokiest dish right in front of you. Pair the parcel with some Mexican rice and it makes the perfect meal for anytime of the day (ok, minus breakfast I guess). Or you could simply have it on it’s own for a perfect low carb option. Either way, enjoy!

Easy Jack Daniels BBQ Chicken and Pineapple Parcel

Ingredients

  • 1 chicken breast
  • Half red bell pepper
  • Half courgette
  • 2 sliced fresh pineapple circles
  • 1 spring onion
  • 1 tsp extra virgin olive oil
  • 2 tbsp full flavour smokey Jack Daniels BBQ sauce
  • Pinch salt and pepper

Instructions

Begin by pre-heating your grill (or BBQ) and lay out a large piece of square foil.

In bowl, add the vegetables and oil and mix everything together. Season with salt and pepper to your desire and place in the middle of your foil parcel leaving a large space for your chicken.

Place the chicken in the middle, as well as the two pineapple slices (place these just under the chicken but slightly poking out) and smother with BBQ sauce. I personally added the BBQ sauce to the chicken breast and a little on the pineapple. I left the veggies to soak up the olive oil.

Once done, create an edge with the foil of your parcels and pop under the grill to get a nice chargrilled effect. If using an outdoor BBQ, then tightly seal the parcel and place on top of the BBQ - making sure to turn the parcel half way through cooking. Cook for 20-25 minutes or until chargrilled (and cooked throughout).

Remove from the heat and dig in!

OK now this sounds absolutely delicious – I keep meaning to try parcel meals as they always sound like such a delicious way to make a meal and really seal in the flavour.

I tried jack daniels bbq for the first time recently at TGI Fridays so I’d be keen to try some myself, especially as you can’t beat bbq chicken x

This looks so rustic and comforting! I don’t like JD after an unfortunate incident in my teens, but it sounds really tasty otherwise…I know lots of my friends would love it.

This sounds like a delicious recipe very easy to make. I do love BBQs but indeed they are a nightmare to clean after, so if this recipe can be done in the oven, even better! I haven’t tried the JD bbq sauce before.
