Healthy Apple, Pear and Date Crumble

Happy Sunday, everybody!

It’s not a fulfilled wet and rainy Sunday indoors unless you’ve baked up a delicious warming dish. Is it?

When it’s a little cold and miserable outside I can’t help but whip up something comforting to fill the house with and this apple, pear and date crumble is simply perfect to fit the bill.

This crumble is definitely a healthy and delicious combination of all things sweet. I have a soft spot for all three main ingredients –  especially dates. They are an amazing health food that replicate a perfect caramel flavour in your bakes. If you’re yet to try then you’ll be amazed!

The filling of the crumble is nothing but sweet and delicious powered by cinnamon spice, and the topping is a golden, oat and almond crisp that works perfectly well against the hot, soft filling.

Everybody will love you for this bake. You’ll be the Grandma of all Grandma bakes. Ok, not old but you get what I mean.

Ingredients

Filling
Two cooking apples peeled and diced
3 pears peeled and diced/sliced
1 cup pitted dates diced into small cubes
3/4 cup coconut milk
1 tsp sukrin gold
2 tsp xylitol (or other sugar replacement)
1 1/2 tsp cinnamon
1 tsp vanilla extract

Crumble
1 cup oats
1/2 cup almond flour
1 tsp vanilla extract
3 tsp melted coconut oil (I use natural empire)
3 tbsp fruit syrup/maple syrup (I use SweetFreedom)
1 tsp sukrin gold
pinch salt

Method

Begin by pre-heating your oven to gas mark 6.

In a large pan add your coconut milk, diced apples, diced pears and the rest of your filling ingredients and bring to the boil. Once done allow your apples and pears to cook on a low heat until they are soft. Test the sweetness of your filling too and adjust if needs be.

In a separate bowl add together your oats and almond flour and mix together. Add the rest of your crumble ingredients to the bowl and mix together. Your mixture should be a perfect crumble texture with just enough stickiness to hold together.

In an oval baking dish add your filling and press out into an even layer. On top of this layer add your crumble and again, layer out until even.

Place your dish into the middle of the oven and bake for 20-25 minutes until you have a golden, crisp top.

Remove from the oven and serve after a minute or two. The hotter, the better! Enjoy and perhaps serve with a scoop of salted vanilla ice-cream or natural yoghurt. Go on, treat yourself!
