Healthy Soft Serve Cherry Ice Cream

So I did it! Over the past 21 days I’ve been collaborating with Seasonal berries and have been incorporating fresh cherries into my daily diet.

Now, I’m not quite one to believe that you feel benefits straight away from using/consuming something. Everything takes time, right? However, what I have noticed since consuming cherries everyday is that my muscle soreness has been somewhat limited than it usually is and i’ve been sleeping better than usual. Hallelujah!

That’s because cherries contain melatonin, a hormone that helps regulate your sleep-wake cycle and in turn this relax’s, calms and prepares you for a natural recovery and a peaceful nights sleep!

So to finish off my 21 day challenge I thought i’d leave you all with this delicious soft serve cherry ice cream recipe. Its super easy to make, free from refined sugar and is incredibly creamy and refreshing. Plus, the combination of the banana and cherry really create a sugar-like taste that manages to satisfy your cravings just like regular ice cream. Ok, almost.

Ingredients

3 chopped and frozen bananas
1 1/2 cup fresh cherries frozen for a few hours
1 tsp vanilla extract
1 tsp coconut sugar (I used The Groovy Food Company coconut sugar)
2 tbsp almond milk

Method

Grab a blender/vitamix and add all your ingredients to it – apart from the coconut sugar and vanilla extract. Whizz everything together until you have a smooth texture (this could take some time).

Once smooth, add the sugar and vanilla extract and whizz together.

Pour your ice cream into a bowl (or moulds) and pop back in the freezer for 10 minutes to let it harden up slightly.

Remove your ice cream from the freezer, top with additional cherries (optional or use other toppings) and serve up.

I wont lie, those pictures got me reaching for cherries, I love cherries, love cherry ice cream too 😀 Cherries are amazing for your body. A few years back I had some health problems and I was advised about cherries. They weren’t a magic potion but over time they do work and you do feel the benefits. You should try making cherry yogurt – Great for breakfast with musilee 😀

Yummy. I am always looking for a healthy alternative and I love real cherries. This sounds delicious! I might make these into popsicles for my son for the holiday.
