Protein Sweet Omelette

It’s not often you’ll see me experimenting with breakfast recipes. I’m a girl who loves her oats and the day you’ll find me eating anything else in the early hours of the morning is when you’ll find me running on a treadmill. Never. 

So, when I say this is the only recipe where I will consider eating something else than my beloved oats than you better believe me that this recipe is goooooood, really good.

Not only is it packed with protein but it’s also low carb which is amazing for me and my low carb days. It’s also super simple and quick to make which is perfect for the morning. Although… I know I said it’s a breakfast recipe but who even sticks to breakfast foods in the morning?! If you do then I’m sorry but we can’t be friends anymore. Ok, I joke… Maybe. So yeah, eat it when you like, where you like and how you like!

So enough blabbering and let’s get to it.

Serves 1 big omelette (you can always do mini pancakes)

Ingredients

Omelette
2 eggs
1 scoop Stripped vegan vanilla protein powder
1 tsp Indigo Herbs maca powder
Toppings
Sweet Freedom dark fruit syrup
Punch foods coconut brownie seeds
Creative Nature hemp seeds
Berries
Pumpkin seeds

In a bowl simply add the omelette ingredients and whisk together until you have a smooth mixture with absolutely no bits. Set aside and heat up a frying pan with a tsp of coconut oil. Once the pan is hot add your omelette mixture and cook 3 minutes each side – dependant on how well you like you’re omelette cooked.

Serve on a plate and top with the toppings. I like to include a variety of healthy fat sources which I get from seeds and nuts. Throw on whatever tickles your fancy. For this one the combination of berries, seeds and fruit syrup tasted wonderful. Sweet and light!

You could also use this recipe for a savoury protein omelette but opt the vanilla protein for unflavoured and perhaps top with avocado, poached eggs and salmon. Mmmmm, that sounds good, doesn’t it?!
