These chocolate superfood energy bars are AMAZING. Honestly, sometimes our cravings for a healthy treat isn’t quite satisfied by a banana or a handful of nuts. Learning to make healthy and delicious snacks to stop those pesky craving may seem a little investment at first but can turn into a healthy lifestyle that’s easy to maintain. Who said eating healthy had to be boring?
These bars are packed with nuts, seeds and superfood’s to keep your body energised and full with important vitamins. A perfect pick-me up snack during the week you keep your healthy eating on track.
Ingredients:
1½ cups soft Medjool dates (about 15 or 16), pits removed
¼ cup raw almonds
¼ cup raw cashews
¼ cup cacao powder
3 tablespoons cacao nibs
6 tablespoons hemp seeds
1 tablespoon chia or flax seeds (I used chia)
2 tablespoons of your favourite seeds
Method:
-In a food processor grind all the ingredients together (except for the 2 tablespoons of seeds and 1/4 cup of dried fruit) for roughly 2 minutes until the dough is coarse.
– Check the consistency by pinching the dough between two fingers. It should stick together and not crumble. If dough is too dry add 1/2 teaspoon of water. Blend until stickiness is created.
– Add the last tablespoons of seeds and dried fruit and pulse your processor until it is chopped into small pieces.
– Take the dough out and place on a plastic wrap on a flat surface. Gather into a solid mass in the middle; then use the sides of the plastic to wrap over dough as tightly. Shape into a compact rectangle (as seen in image).
– When the bars are solid, remove the wrap and cut into 8 bars. Wrap and keep in the freezer if you wish to keep for a long period.
