Sweet potato nutty flapjacks.

You may think including sweet potato in a sweet treat may sound bizarre and unappetising but, these sweet potato nut bars are so sweet, gooey and nutty. They are totally unrefined and include only healthy ingredients – no dairy and no sugar.

I used to really dislike sweet potatoes. I just couldn’t get used to the extremely sweet taste for a vegetable. However, when I learnt how to control this sweetness with different herbs and spices my tastebuds started to change and suddenly I found sweet potato becoming a regular vegetable in my diet. As well as adding these changes to the recently popular veg I started incorporating it into my bakes. ‘Huh?’ you may be wondering. Well, hear me out… The sweetness of these potatoes works perfectly in sweet bakes and surprisingly, most of the time you wouldn’t even believe you added the sweet potato.

Sweet potatoes contain huge benefits for our bodies too. They contain an incredible amount of Vitamin A , with each cooked cup giving you four times your daily dose. This vitamin is essential for maintaining healthy and glowing skin, as well as strengthening your body’s immune system against infections. Sweet potatoes help with blood regulation,  which really boosts your energy and keeps insulin levels steady. These potatoes are packed with fibre… In fact, twice the amount of normal potatoes! Not only does this help with your food digestion but this helps your body stay full for longer and slowly releases energy.

Convinced yet? There’s no reason not to whip up these delicious sweet potato nutty flapjacks. A perfect snack idea to keep your cravings at bay and to help to maintain a healthy lifestyle.

Now, let’s get to it.

Recipe:
100g buckwheat
600g sweet potato
2 ripe bananas
3 tablespoons maple syrup
pinch of salt
1 cup mixed nuts
1/2 cup dry fruit
1/4 cup pumpkin seeds
1/4 cup almond flakes

Method:
-Pre-heat oven – gas mark 4
-Peel and cook the sweet potatoes until they’re very soft.
-Cook the buckwheat for 20 minutes.
-Once the sweet potatoes are cooked throw them into the food processor along with your chopped bananas.
-Mix for 1 minute until ingredients are gooey.
-In a separate bowl throw the rest of the ingredients together and mix.
-Once mixed together add the sweet potato and banana mix.
-Stir both mixtures together.
-Place mixture into a lined baking tray.
-Place inside oven and bake for 20 minutes until a knife can be inserted and pulled out dry.
-Take the bars out of the oven and let cool for 10 minutes so they can stick together.
