Raw Mixed Berry & Walnut Chocolate Brownies

STOP what you’re doing right now and write down the recipe for these amazing sugar & dairy free brownies (probably the best recipe of mine to date – overtaking my famous Raw Snicker Slabs – which you can find here).

I made these for the cafe I work at and within half a day of them being on sale they were all gone. I totally winged the recipe and hoped for the best in the hope of getting rid of some leftover ingredients that were lying around. The textures in these brownies are what make them so irresistible! The base consists of a nutty and thick gooey brownie-like texture whilst the topping is a smooth chocolate mouse-like frosting. Basically, if you love chocolate and nuts then you’ll love these.

Serves 8-12 (dependant on cutting)

Ingredients

Brownie layer

100g almonds
100g ground almonds
375g pitted dates
7 tablespoons cacao powder (I use Bioglan – which you can find here)
70g dried mixed berries
70g walnuts
2 tablespoons coconut oil (I use Lucy Bee coconut oil – you can find that here)
Pinch sea salt

Frosting layer

215g pitted dates
110g cashews (soaked for an hour or two)
4 tbsp water
6 tablespoons cacao powder (again, Bioglan)
3 tablespoons maple syrup
2 tablespoons coconut oil (Lucy Bee)
Pinch sea salt salt

Topping

(Optional)
Walnuts
Baking petals

Method

Place the almonds, dates, salt, cacao and coconut oil from the brownie layer ingredients into a food processor and blend until it is coming together and the nuts are fairly fine. Add in the walnuts and mixed berries and pulse until the walnuts have broken down a little – you will still want some chunks left so be careful. Once done, press all of this into a tin and put in the fridge.

Drain and rinse the cashews. Then blend the dates for the frosting into a smooth paste. Add all other ingredients and blend until it is completely smooth and slips off your spreadable knife palette. Remove the tin from the fridge and spread this on top of the brownie and refrigerate again.

These brownies can be kept in the fridge or frozen if you want to keep them a little longer (although, i’m not sure you’ll have any left!).
