Now that i’ve started working full time I’ve really missed whipping up some healthy creations. So, this weekend I took full advantage of a quiet Saturday evening and made a delicious batch of protein brownies using one of my favourite protein brands, Motion Nutrition.  This is probably the only whey protein that my stomach agrees with and can handle it on it’s own as a protein shake (which by the way, is incredibly delicious and creamy – I use the coconut flavour). All of Motion Nutrition’s powder products are made from natural and certified organic ingredients to provide the best sources of nutrients. I also love the fact that these guys guarantee that you are not ingesting traces of nasty pesticides or herbicides, that crops were grown away from polluted areas, and that the cows producing milk for our whey were fed grass and foliage and certainly no GM feed. This is the kind of stuff I like to hear!
These brownies were also kind of a request from my new work team who are intrigued by my healthy treats – no pressure then!
Serves 8
Ingredients
2 cooked medium sweet potatoes (in cubes)
1 scoop protein powder (I used motion nutrition coconut whey powder)
4 tbsp raw cacao
3 tbsp maple syrup
Half a banana
8 pitted dates
Topped with Cocoa + protein chocolate (optional)
Method
Begin by pre heating your oven to gas mark 4. In a food processor bowl add the cooked sweet potato, half a banana and pitted dates then blitz all ingredients together until combined together.
Add the rest of ingredients (apart from topping) and blitz together again. After a minute or two you should have a creamy mixture (tasting isn’t optional – dig in and give it a taste) and this can then be placed in a baking tin (I used a square tin with baking paper for easy removal). Place the tin in the middle of the oven and bake for 30 minutes.
Take the brownies out of the evening and top with chunks of Cocoa + chocolate before placing the brownies back in the oven for a further 5 minutes. After this remove the brownies from the oven and leave to cool on the side – letting them cool is very important to ensure they set properly.
If you’re good with temptation then these would be perfect to use as a sweet snack during the week minus the guilt and cheaper than store brought snack bars too!
