When it comes to pancake recipes I like mine to be quick with minimal ingredients and most importantly, delicious. I also have two different recipe versions: High or low carb for all you macro counters out there!
I’ve been using both of these recipes for quite a while now and it works perfectly every single time. Ok, perhaps not the shape of the pancakes (don’t judge) but it’s the taste that counts, right!? I often whip up these pancakes on a Sunday morning and I love including my favourite protein powders which are VivoLife or MissFitsNutrition.
Ingredients – High carb
1 banana (mashed)
1 scoop protein powder
2 eggs
40g oats
Ingredients – Low carb
2 eggs
1 scoop protein powder
50g water
1/2 tsp baking powder
Method
In a food processor whizz together all the ingredients until you have a silky smooth texture. You definitely do not want any lumps!
Heat a flat level pan (pancake pan would be best) with 1 tbsp of coconut oil on a high/medium heat. Add the mixture to the pan in separate go’s to create mini pancakes. OR, you can make one massive pancake. You will need to cook each side for roughly 1 1/2 mins and flip over and repeat.
Top with your favourite topping and enjoy!
