I shared a photo of my homemade granola earlier this week and since then you guys have been asking me for the recipe as if your breakfast soul’s depended on it.
“Look at how big those clusters are!”
The granola I shared on my Instagram was purely a nut version. However, for this recipe I’ve made it an Easter special and went with one of my favourite easter flavours – carrot cake. Of course you can omit the carrots, nutmeg and ginger if you really want to but the flavour combination is simply delicious. Just think of of the nuttiest carrot cake with lots of crunch! Yum.
I’m not afraid to toot my own horn when I say this, but this really is the best nutty nut granola with the biggest clusters I’ve ever made. In fact, it’s bursting with crunch and clusters! I’ve never really been a fan of homemade granola which includes oats as the base. The recipe often turns out a failure with absolutely no crunch, clusters or even the simple flavour of proper granola – just golden oat flakes and no sign of a cluster in sight.
It took me a while to master a granola recipe that was different, healthy and maintained that sweet and sticky taste that we all know and love from our favourite classic granola recipe. First up was coconut oil – too soggy. Second up was fruit syrup – not sticky enough. And third up was a ‘healthier’ butter spread which turned out to be anything but healthy. My last and final shot was raw, organic honey (the healthiest kind) and alas, I hit the nail on the head. Clusters. Big clusters and lots of them too. Bingo.
When it came to holding the nuts together (beside the honey) I wanted something different than oats. Coconut flour dried the granola out too much. Wholemeal flour tasted a little odd and quinoa just felt a little too… humph. It wasn’t until I experimented with almond flour when the recipe finally came together as a whole. The flavours worked, the nut flavour was heavenly and the clusters… well they completely formed as one big nut. I love it. My mum loves it. My nan loves it. Heck, everyone whose tried it loves it.
I can promise you, with my whole nutty heart, that this will be the best crunchy granola recipe you will make that’s filled with the biggest of clusters. In fact, you can choose just how big they are! The less stirring of ingredients, the bigger the clusters (tip of the day).
So let’s bring this together: This recipe is 100% healthy, grain free, low carb, free from refined sugar, dairy free and can be prepared in just 5 minutes. Give me 20 minutes of your baking time (trust me it’s worth it for the smell) and my friends, you’ll have the very best nutty nut granola recipe sitting in your household ready to attack. Quite literally.Â
Ingredients
- 60g pecans
- 70g almonds
- 60g walnuts
- 65g almond flakes
- 100g ground almonds
- 1/2 cup raw honey
- Pinch salt and a sprinkle of pepper
- 2 tbsp cinnamon
- 1/2 tsp ginger
- 1 tsp nutmeg
- 2 grated carrots
- 80g raisins
- 1 tsp vanilla extract
Instructions
Begin by pre heating your oven to gas mark 4.
In a bowl mix together all of your ingredients apart from the carrots and honey. Once mixed, add the honey (I use Hilltop Honey to make sure it's the best raw and organic quality) and stir until clusters start to form together. You do not want to over stir as the clusters will come apart.
Line a baking tray with parchment paper and pour your granola mix onto the tray and lay out evenly. With a spoon, push together your clusters so they're still together.
On a separate baking tray (lined with parchment paper) pour your grated carrots onto it and again, lay evenly.
Pop both trays in the oven and bake the granola for 20-30 minutes and the carrots for 10 minutes.
Once the grated carrots are baked (they'll look dry) remove them from the oven and leave to one side.
Once your granola is golden brown, remove from the oven and leave to cool for them to harden.
Once your granola has cooled, pour it into a bowl and add the carrots and mix everything together. Either serve up with your favourite milk (mine's Pip & Nut's almond milk) or store in an air tight container (I use my favourite Kilner jars).
Enjoy and try not to eat the lot in one sitting... like me.

Notes
This is an Easter carrot cake themed granola recipe, however, you can omit the nutmeg, ginger and grated carrots to make it purely a nut based granola recipe.

I love making my own granola because I get to add all the things that I enjoy. It’s perfect with pretty much anything! From milk to yogurt to overnight oats. I think this is recipe is a keeper. Can’t wait to try it.
