Healthy Vegan Hot Cross Bun Flapjacks

Besides my healthy hot cross bun recipe, this has got to be my second favourite Easter recipe of all. There’s just something about the flavours of a hot cross bun that are pretty damn hard to resist. Slather it with melted butter and you’re in heaven, right?

When it comes to Easter I’m a firm believer of enjoying the moment, enjoying the company and of course, enjoying all the food – guilt free. However, in the lead up to Easter I tend to look for more healthier options that I can enjoy and are more friendly towards my gut. Lactose intolerant problems, y’all. 

So when it came to this recipe I thought why not combine my favourite Easter treat with one of my ultimate weaknesses – flapjacks. Give me a flapjack – anytime, anywhere – and I’m your new best friend. And holy smoke balls you guys, never have I seen a batch of freshly baked goods to disappear so quickly!

These vegan, dairy free, sugar free hot cross bun flapjacks have all the flavour of your traditional hot cross bun – just squeezed into a chewy flapjack. The best bit about the flavour is the sweet orange combined with the juicy plump raisins with a hint of cinnamon. Mmmm, mmmm.

If there’s another reason why you should make these healthy vegan hot cross bun flapjacks this weekend then it’s because of the mouth watering smell it creates in the kitchen whilst the flapjacks are baking. Orange, cinnamon and the smell of sweet agave nectar all in one. 20 minutes of pure mouth drool. Trust me.

The maca powder used in this recipe helps give the flapjacks a slightly nutty, yet earthy flavour. Don’t worry, it works amazingly well against the sweetness of the Easter fruits and it helps bring out the flavour of the flapjack! I’ve used Vivo Life maca powder and it’s the only maca powder I’ll use now. I have it every single day (mainly in my oats) to help my aid digestion and help to balance my hormones. It’s an ingredient I swear by! Honestly. 

I’ve used Groovy Food Light Amber Agave Nectar to hold my flapjacks together however if you’re not fussed about the vegan honey argument then I’d suggest using raw honey for the ultimate chewy flapjack! Also, if you’re not an apple fan then simply swap for the same amount of mashed banana. It’ll work just as well with holding the flapjacks together, however it may be a little softer.

Ingredients

  • 200g steel oats
  • 100g agave nectar (or raw honey if non vegan)
  • 130g apple puree
  • 70g raisins
  • 1 orange peel
  • 1 tbsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg
  • 1 tsp maca powder (I've used Vivo Life maca powder )

I love the idea of combining the flavours of Easter with a classic flapjack. I’m drooling just thinking about it, it’s my first Easter as a vegan.

Hot Cross Buns and Flapjacks are two of my weak spots. Combine them together and I’m in seasonal heaven. I’ll definitely be trying these.

I love flapjacks too, they were my go to sweet treat when I was restricted by so many intolerances a few years ago. Your Easter take on them sounds delicious, so many yummy flavours and perfect for a well deserved treat over the weekend.
