Sunday morning I found myself whipping up probably one of the most delicious stack of pancakes I have ever tasted – think all things coconut, cinnamon, organic flour and baobab. Mmmmm.
Last week I was kindly gifted by the Superfood Bakery with their energy booster pancake mix. However, before I go on I would like to point out that this is not a paid/asked for post – i’m simply promoting a product I love.
The pancake mix itself is a perfect healthy option full of ancient grains and baobab powder (which I’m just obsessed with right now) making it a nutritious meal first thing in the morning – or whenever! Who said pancakes are just for breakfast?
I have to admit I loved the taste of the pancake mix so much so that I made the whole stack for myself. Sorry, not sorry! I made my pancakes with my new pancake skillet so the pancakes came out pretty thick – although, I couldn’t quite finish the whole stack so I saved the other half for snacks throughout the week.

Organic brown rice flour
Organic tapioca flour
Organic coconut flour
Gluten-free baking powder
Organic coconut sugar
Vanilla powder

How to make your pancakes
Easy like Sunday morning…
The last thing you want in the morning is a mahoosive list of ingredients to whip up some simple pancakes. Ya hear me? So luckily the Superfood Bakery have made this as easy as pie.
All you need to do is add 3 eggs (or chia eggs for all my vegan friends) and milk/almond milk to a bowl, whisk, add the pancake mix, whisk again and fry up your pancakes. Woolah – you now have a heavenly stack of pancakes (10-15 pancakes to be exact!) I felt obliged to make mine Instagram worthy (blogger life) so I added mixed seeds and frozen berries to make a delicious fruity stack of superfood pancakes.
You can grab your mittens on this particular pancake mix for £6.99 – not too shabby. Although, for now I think i’ll be having these as a treat every now and then and between that I’ll be whipping up my own pancakes which you can find here.

Have you tried them with the chia egg?
Nope but it does say on their website that you can! 🙂
