Healthy Christmas Spiced Flapjacks

Que the Christmas films and baked goodies, Christmas has arrived! Well, almost. 

With December right around the corner, I’ve been working on a few Christmas recipes and first up is my favourite: Flapjacks. I love flapjacks and these Healthy Christmas Spiced Flapjacks are full to the brim with festive flavours! From nutmeg to orange, you’ll be in the mood for Christmas in no time.

These flapjacks may look a little decadent but, compared to the traditional recipe of a flapjack, these are much healthier. Don’t worry though, no flavour is lost! They’re just as oaty and buttery.

So what makes these a Christmas spiced flapjacks? The fruit, cranberries, spices and of course, the coated dark chocolate bottom. I don’t know about you, but I don’t think Christmas is Christmas without a little dark chocolate.

The best thing about flapjacks? They’re pretty dang easy to make. Perfect for a little lazy Sunday baking. While these flapjacks may need a little extra prep (you have the chocolate to thank for that one), they really are a simple and fun bake. Not so much a chocolate lover? Skip it!

Healthy Christmas Spiced Flapjacks

Ingredients

  • 50g coconut sugar
  • 50g butter (opt for dairy-free butter if needed)
  • 30g raw organic honey
  • 65g mixed fruit
  • 55g apricots
  • Juice of 1 orange
  • 1 tbsp almond flour
  • 50g walnuts
  • 50g fresh cranberries
  • 1 tsp mixed spice
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • 1/4 tsp nutmeg
  • 50g dark chocolate

Instructions

Begin by preheating your oven to gas mark 4.

In a bowl, add the sugar, butter and honey and mix together.

In a separate bowl, mix together the rest of the ingredients - minus the dried fruit, cranberries and walnuts.

Add the melted butter to the oats and mix thoroughly. Add the dried fruit, cranberries and walnuts and mix one more time.

Grease a square baking tray with a little butter (or coconut oil) and add the mixture to the tray. Flatten with a spatula and pop in the middle of the oven to bake for 20 minutes.

Once golden, remove from the oven and flatten once again with a spatula (this is important). Leave to cool completely and, using a very sharp knife, cut into bite-size pieces or 8 large flapjack rectangles.

While your flapjacks cool, melt your dark chocolate. I melt mine by popping the chocolate in a heat-proof bowl over a pan of hot water.

Very gently, coat the bottoms of your flapjacks by dipping them into the melted dark chocolate. Repeat this for every flapjack. Once done, pop your flapjacks into an airtight container and store in a fridge. That's if there are any left!

Notes

You can buy coconut sugar from most supermarket stores. It's usually amongst the sugar alternative down the baking aisle!
