Fluffy, chocolatey and light, that’s how we like our pancakes in the morning. With pancake day right around the corner (quite literally), I thought I’d treat you all to a chocolate chip pancake recipe that should be a staple recipe in your kitchen.
If you’re a fan of my chocolate chip banana pancake recipe, along with my popular 4 ingredient protein pancake recipe, then you’ll absolutely adore these light and fluffy chocolate chip pancakes. I promise.
Whilst my usual pancake recipes usually contains a healthier flour option (with more nutritional value), this time I’ve experimented with the classic – plain flour. Although I’m a big fan of making classic recipes a little healthier, sometimes you just want the real deal. Right? Saying that I have, however, ditched the sugar and used a sugar-free alternative, so I suppose you could say that these light and fluffy chocolate chip pancakes are a little healthier. But to be honest, who cares? It’s pancake day!
When it comes to fluffy pancakes, there’s always a secret method. The ingredients you use (duh) and how you cook them. I’ve experimented with many ways in the past when it comes to cooking pancakes and annoyingly, slow and steady wins the race. Aka – cook your pancakes gently and slowly! This means medium heat and waiting patiently for those pancake bubbles to appear. If you don’t know what I’m talking about then you’ve been doing it wrong, my friend! By doing so, you’re more likely to end up with fluffier pancakes, as opposed to flat, plastic ones!
If you haven’t checked the ingredients already, then it’s worth mentioning that I’ve included greek yoghurt in this recipe. Not only does the addition of yoghurt make the pancakes fluffier, but it sweetens the pancakes too without the need to add any extra sugar! Plus, these pancakes are likely to leave you feeling fuller for longer too. Winner winner.
If however, you dislike greek yoghurt, then try switching it for sour cream and adding a little extra coconut sugar/xylitol. All in all, if you’re after a pancake recipe that’s light, fluffy and chocolatey, then you’re in for a treat. And hopefully, fingers crossed, you already have these essential ingredients waiting in your cupboards and you can get flipping in time for pancake day!
Ingredients
- 1 cup milk
- 1/2 cup greek yoghurt
- 2 eggs
- 1 tsp vanilla extract
- 2 tbsp baking powder
- 1 1/2 cup plain flour
- 1/4 cup xylitol/coconut sugar
- Large pinch salt
- 1/2 cup dark chocolate chips (I use anything over 80%)
- Agave nectar to serve (I use the Groovy Food agave nectar)
Instructions
In a large bowl, add together the milk, greek yoghurt, eggs and vanilla extract. Whisk everything together until combined. Be careful not to overmix.Â
Add the flour, baking powder, sugar alternative, salt and dark chocolate chips. You can either mix your chocolate chips into the batter or top them on top of the pancakes whilst they're cooking in the pan.Â
Grease a pan with either coconut oil or butter and heat on medium.Â
Once the oil/butter has melted, pour 1/4 of a ladle's worth into the pan and repeat until you cannot squeeze anymore pancake mixture into the pan. Heat on medium until bubbles start to form and flip. Continue to cook for another minute or two and then flip onto a plate whilst you make the rest of the pancakes.
Continue this process until you've used all of the mixture.Â
Serve warm with a drizzle of agave syrup (I use the Groovy Food's agave nectar).Â

Pancakes are the best & combined with chocolate, absolutley delish! Cant get enough of these. I loved making them and of course eating them. Will be making more for sure!
